This month, I’m giving you my local favorite Farm to Table and Farm Tour events, a quick spring market tip for sellers, and an office exclusive listing, not yet advertised publicly.

The Whole Ox is an artisanal, old-fashioned butcher shop and eatery in Marshall, Virginia, founded in 2011 by husband-and-wife duo Derek and Amanda Luhowiak. Specializing in whole-animal butchery, the shop sources ethically raised, pasture-fed meats from local farms, embracing full transparency and minimal waste—truly using everything from “nose to tail.”

Among Amanda and Derek’s favorite sources is Hidden Creek Farm, a humane-certified organic farm dedicated to soil health and holistic land stewardship since 2015. Spanning 550 acres—406 of which are protected under a conservation easement—the farm raises diverse heritage livestock, including Red Poll cattle, Tamalitsa pigs, Katahdin sheep, and heritage laying chickens, alongside a wide array of organic vegetables grown year-round in open-air gardens and high tunnel greenhouses.

In the Whole Ox’s artisanal shop, you’ll find a curated selection of farmer’s cheeses, jams, chutneys, pickles, and herb mixes—everything needed to craft a truly memorable meal.

Protected under an agricultural conservation easement to maintain its rural nature and protect Chesapeake Bay tributaries, Hollywood Farm is owned and operated by Jean-Francois and Thackray Seznec. Last year we couldn’t decide where to put the table; there were so many good choices. This year it could be the spot near the classic red barn and the vegetable garden. Or maybe the field that really shows off the sunset. A big circle table surrounding the stately heritage oak would be great. We’ll see what the day brings!

After a career path that was far from any kitchen, Chef Matthew Lego decided his love of food and cooking would be his guide. His path to success has brought a deep list of connections with providers of local ingredients, including his friends at Hollywood Farm.

Burnt Hill Farm is a 117-acre regenerative polyculture farm run by a trio of siblings: Farmer Drew Baker, Winemaker Lisa Hinton, and Operations Lead Ashli Johnson. After several visits over the years, the farm has become one of our favorite stops. Each year there is more to see and inspire: buzzing honeybees, grazing sheep and foraging woodland hogs, heritage grains waving in the wind, vineyards and orchards laden with fruit. Our reception will feature award-winning Old Westminster wines and passed appetizers as we take in views of the Catoctin range and Sugarloaf Mountain. Drew will give us an overview of the farm operations and guide us to the table.

Guest chef Tae Strain is a chef-partner at Burnt Hill, culinary director of Old Westminster Winery, and a Momofuku veteran. Seoul-born and Maryland raised, Rae’s menus blend his Korean-American heritage with the farm’s hyper-seasonal ingredients. Burnt Hill generally requires reservations to visit. Consider this your invitation.
